Pakcoy Leaves Found to Have Highest Antioxidant Levels Among Mustard Varieties
This study measured the levels of chlorophyll and carotenoids in different types of mustard leaves using UV-Vis Spectrophotometry. Pakcoy had the highest chlorophyll content at 86.76 mg/g, while white mustard had the lowest at 0.75 mg/g. Green mustard and pakcoy had high carotenoid levels of 50.4 mg/g and 198.04 mg/g, respectively, with white mustard having the lowest carotenoid content.
