Lactic acid fermentation is a process where sugars are turned into energy and lactic acid by bacteria and cells. The study looked at how milk ferments at different temperatures, finding that 30°C is the best for fermentation. It takes about 15 hours to ferment fully, with the most lactic acid produced in an earthen pot. The pH for fermentation is between 6.5 and 7.5. This type of fermentation is a simple redox reaction, where glucose turns into lactic acid without needing oxygen.
