Pesticide residues in fruits and vegetables are a big concern for food safety in China. Different ways of processing food can help remove or break down these residues. Some harmful pesticides are being phased out, but some still linger. New methods like high-resolution mass spectrometry are being developed to better monitor pesticide levels in the future.
