New Rice Mutants Offer Healthier Starch Option for Improved Diets
A study compared two types of rice with a normal one to see how their resistant starch is structured. One mutant rice had more amylose compared to the normal rice, while another mutant had similar amounts of amylose and amylopectin. The chain lengths of amylopectin in the mutants were different from the normal rice, with more short chains in one mutant and fewer in the other.
