Rice dough stronger and more elastic than wheat dough, study finds.
The researchers studied wheat and rice doughs to compare their characteristics. Rice flour and starch have more carbohydrates and fibers than wheat. Rice dough interacts strongly with water and oil. Rice starch granules are uniform and closely packed, while wheat starch granules vary in size and shape. Rice dough is more elastic than wheat dough. A model using 'chess' geometry accurately simulated the deformation of rice and wheat doughs.
