Germinated brown rice boosts antioxidants and nutrients, revolutionizing rice consumption.
Germinating brown rice can improve its quality and nutrition. In this study, three types of rice were compared: Sakha 104, Giza 178, and Giza 182. Germinated brown rice had lower amylose content and higher elongation ratio compared to white and brown rice. Giza 178 showed the highest elongation ratio. Indica rice had higher hardness than Japonica rice. Giza 181 had the highest protein and fat content. Germinated brown rice had the highest protein, fiber, and fat content. White rice had the lowest phytic acid content. Japonica rice had higher antioxidants than Indica rice.
