Wild cucumber seeds offer new sustainable source of vegetable oil.
The researchers compared the seed oils of wild cucumber, cucumber, and gherkin to see if wild cucumber seeds could be a good source of oil. They found that wild cucumber seeds contain a similar amount of oil as cucumber and gherkin seeds, along with proteins, carbohydrates, minerals, and fiber. The main fatty acid in the seed oils was linoleic acid, making wild cucumber seeds a potential alternative source of vegetable oil for food applications.
