Blueberry Cultivars Revealed: Beikong Tops in Sweetness, Elizabeth in Citric Acid!
The researchers analyzed the sugar and acid content in ten different types of blueberries from North America using a method called HPLC. They found that blueberries contain fructose and glucose as the main sugars, with varying levels among the different cultivars. Citric acid was the most abundant organic acid in blueberries, with significant differences in content among the cultivars. Beikong had the highest levels of fructose and glucose, while Elizabeth had the highest citric acid content. The ratio of sugars to total acids varied greatly among the blueberry cultivars, with Northsky having the highest ratio. These findings show that different blueberry varieties have distinct levels of sugars and acids, which contribute to their unique flavors.
