Stem vegetables in Zibo City pose health risk to children
The study analyzed the levels of arsenic, cadmium, lead, and mercury in vegetables in Zibo City to assess the health risks for people. They found that lead was the most common heavy metal in vegetables, followed by arsenic, cadmium, and mercury. Leaf vegetables had the highest levels of cadmium and lead, while stem vegetables had the highest levels of arsenic. Overall, the contamination of heavy metals in vegetables was low, with no significant health risks from eating one type of vegetable. However, children and older adults faced higher health risks from heavy metals in vegetables, especially from arsenic in stem vegetables. The study also found that the heavy metals in vegetables had similar sources. In conclusion, the contamination of heavy metals in vegetables in Zibo City is relatively safe, but caution is needed with stem vegetables for children's health.
