Maize-based chapatti beats wheat in nutrition and taste test.
The researchers developed chapatti using maize-based flour mixed with other grains for better nutrition. They processed the grains to make them healthier and easier to digest. Different levels of the composite flour were tested, with T3C3 being the best in terms of energy, omega-3 fat, fiber, and calcium compared to wheat flour chapatti. T2C2 chapatti was found to be the most acceptable in terms of taste and texture.
