Food sensors are new technology used to monitor food quality and safety, reducing waste and protecting consumers. These sensors are integrated into packaging to extend food shelf-life during transportation and storage. The review discusses the importance of food sensors, the development of intelligent packaging, and different sensor approaches. Examples of sensors integrated into packaging systems are provided, along with strategies to detect spoiled food early. On-package sensors show promise for smart packaging, but there are challenges to address.
