99.4% of Gluten-Free Foods Safe for Celiac Consumers in Italy
The goal of the research was to check if gluten-free foods for people with celiac disease in Italy were safe. The researchers tested over 4600 food samples from different categories like pasta, cured meat, and sweets. They found that 99.4% of the samples had very low levels of gluten, making them safe for celiac consumers. Only a small percentage had slightly higher levels of gluten, but still within the acceptable limits. This study shows that most gluten-free foods in Lombardy and Emilia Romagna are safe for people with celiac disease.
