New soybean varieties with high oleic acid for healthier vegetable oils!
Researchers evaluated 59 early maturing soybean plants to find ones with low linolenic acid and high oleic acid, which makes soybean oil less likely to spoil. They found six plants with high oleic acid content, which is good for stability. Two plants, EC39490 and AGS2, had over 45% oleic acid and could be used to make soybean varieties with better stability.
