A study looked at making yogurt from milk and different cereals. They found that adding cereals increased the production of acid by bacteria in the milk. Yogurt with corn had the thickest texture, while barley yogurt was the thinnest. Yogurt with wheat was rated the best tasting, while barley yogurt was rated the worst.
