Boosting Acid Production in Soy Milk for Healthier Fermented Products!
A study looked at how different types of soy milk affect the growth and acid production of certain bacteria. Lactobacillus acidophilus made the most acid in regular soy milk, while other bacteria did better in defatted soy milk. Adding yeast extract boosted acid production, especially for L. acidophilus. More solids in soy milk helped L. acidophilus and L. bulgaricus grow better and make more acid.
