Cultured Eel Meat Healthier Than Wild: Study Shows Higher Nutrient Content
The researchers compared the fat in farmed and wild eels. They found that wild eels had more glycolipids, a type of fat, than farmed eels. Farmed eels had higher levels of certain fatty acids. The fat content in the muscles of farmed eels was slightly lower than in wild eels. The patterns of fat in the two types of eels were a bit different when analyzed using high performance liquid chromatography.
